This delicious salad with romaine lettuce, beans, bacon, tomatoes, fresh rosemary, parmesan, onions, and more!

Chop bacon into small pieces and add to a preheated skillet. Sauté bacon on medium heat until golden brown, drain on paper towels and set aside. No need to wipe skillet. In the same skillet sauté onion until softened then add in the minced rosemary and halved tomatoes cooking for a couple minutes only. Don't cook the tomatoes too long. Add salt and pepper to your taste.



Chop basil leaves. Drain and rinse beans. Mix the chopped basil, tomato mixture, bacon and drained beans together and add 1/4 cup of freshly grated parmesan. Toss until everything is combined.


Add chopped lettuce to the bean mixture, tossing until combined. I used a combination of lettuces from my garden, mostly romaine.

Pour red wine vinegar over the top of the salad, sprinkle with more freshly grated parmesan and fresh cracked pepper. Serve and enjoy!
